
Stop the Temperature Dip in Your Deck Ovens
If you’ve spent any real time with a heavy-duty deck oven, you know the struggle. You open the door, slide in a batch of cold dough, and boom—your internal heat vanishes. It’s a constant fight against the air in the room and the coldness of the product. That’s where we come in. We use infrared (IR) replacement heaters and a bit of smart tech to stop those temperature drops from killing your crust.
Why your thermostat is lying to you
Here’s the thing: standard thermostats are slow. They lag. By the time a basic sensor realizes the oven has cooled down and kicks the heat back on, the damage is already done. Your temperature has already tanked. We do things differently. We use high-precision IR systems that look directly at the surface of the baking stone or the bread itself. The system spots the difference between where you want the heat to be and where it actually is, then tweaks the power to the IR lamps in milliseconds. It’s basically a reflex. Whether your shop floor is freezing or your oven is crammed to the gills, the heat stays steady.
The gear you’ll need
Our replacement IR lamps are built to pack a punch. We use quartz glass envelopes so the heat goes straight into the deck, not into the oven walls where it’s wasted. You can wire these into the PID controllers you already have, or if you want things really tight, you can move to a closed-loop system. But a quick heads-up:check your voltage. These high-wattage arrays pull a lot of current. If your wiring is too thin, you’ll get a voltage drop, and your heating speed will crawl. It’s a simple mistake, but it’ll drive you crazy if you don’t catch it.
The trade-off
Now, fast response times aren’t magic—they require a bit of a balancing act. High-intensity IR lamps create a lot of heat in one spot. If the lamp is too close to the deck, you’ll scorch the top of your loaf before the center is even warm. You’ve got to play around with the lamp height and the compensation frequency. Once you find that sweet spot, you get an even bake every single time.
